this time I felt doing something old and new inspired by a post on the forum, so my sourdough leftover have been transformed in a littl bunch of coarsely shaped grissini stirati
Ingredients
sourdough leftover (you would waste when doing rinfresco)
00 flour 100 gr
water 50 gr
a pinch of salt
some crushed dry rosmary leaves
evo good oil
Method
After kneading all the above ingredients into a loose dough I let it rise till more than doubled, I flatened it with my fingertips giving it a rectangular shape then cut into stripes, at this moment they can be stretched starting from the centre and make them reach the width of your oven tray.
I put them on carta forno and oiled them with a brush, covered with a kitchen towel, some freezer sachets on top to keep them humid, another towel upon them ................ let it rise again and put into the oven at 200° until they start becoming golden and .................. the smell all around says they are ready
