Ingredients
pieces of hare for stews and soups
1 onion
2 carrots
1 celery if you like
olive oil
salt and pepper
some tomato sauce
vegetable stock
Method
fry the hare pieces all around
when they are brown add the veggies cut into big chunks and cook some more
add salt, a couple of tablespoons tomato sauce and cover with vegetable stock
let simmer on a low heat for 2 hours without a lid so the veggie stock reduces to sauce
when the meat is soft, turn off the heat, then "cut" with a mixer into a meat sauce
