hodman offers for piadina fillers

As usual in a hurry I decided to have piadinas for supper, I already had speck, ham and stracchino in the shopping bag. By the time the diced shredded sliced vegs were ready ...... at least 4 piadinas had to be on the table as well ....... standing around in the kitchen hungry people were waiting

Ingredients
peperonata:
green fresh cropped medium/little size peppers
garlic
onion
leek
carrots
tomato

00 flour
salt
water
evo oil
for piadinas dough

stracchino cheese, ham,, speck di Sauris

Method
.................. evo oil in a large flat pan with garlic and sliced white onion going slowly and waiting for the peppers shredded into pieces by hand, to follow sliced lengthwise halved carrots and 2 medium diced tomatoes

after a while I lower the flame and put a lid on the pan with vegs so that I can concentrate on the piadinas and someone dresses the table, while cooking one I keep stretching by hand the following piadina and turn the oneon the fire to let it colour a little while cooking on both sides.
When the beers I put in a bucket under running fountain water appear I am ready .................... to sit and wait for the experts to fill one of the hot good smelling piadinas for me.
Tonight it was a layer of stracchino, spread on half surface, a pair of slices of ham, the colorful vegs on top and finally two or three strips of speck.
................. half glass of cold beer to go with it

There is no pic for this because hodmen/women do not think their work is worth being photographed

............. but it tasted so good
