300 gr 00 wheat flour
6 tbsp lukewarm water
4 tbsp olive oil
a pinch of salt
2 egg whites (or 1 and a little water in addition)
put all ingredients in a bowl and then on your working board, knead the dough/pastry for a while until elastic and silky.
Let it rest divided in two for 30 min. under a hot dried pan (where you boiled some water)
stretch the pastry as thin as you can on your rolling pin, from the center towards the ends , and finally after dusting your fists with flour, make the pastry turn all around till you suspect it could tear.
Cover one layer of pastry, after brushing it with melted butter, with a filling of ricotta, boiled spinach sauté with oil and garlic to dry, nutmeg and some parmesan or other savoury cheese you like.
Cover it with the second layer and brush it as said before.
Put it into hot oven 250° until golden and crispy (15 min or even less)
