Ingredients
Method

  • two handful of dry hop flowers
  • a cup of water
  • tsp sugar
  • flour
  • patience
  • passion
  • curiosity
First of all crop the flowers and hang them in little bunches to dry not in the sun but in the air.
Take a handful of dry flowers and make them boil in a cup of water for 2 or 3 minutes, add a teaspoon of sugar, cover and let it there for 2 or 3 hours. Drain and add to the water as much flour to obtain a dense batter, cover with a wool cloth to let it breathe and let it stay in a warm corner, 3 or 4 days till it becomes yeast with bubbles on the surface. Add to that 1 kg flour and lukewarm water to make a dough. Cover it and let it rest to rise for 15 hours, it should rise 1 time and a half its volume. Put some flour on a tablecloth an make little pizzas, let them dry in the air turning them a few times, before they dry completly rub them, making them into crumbles. Let the crumbles dry and keep them in a tissue sachet.
THIS is the "flowers trachanas" we can use every time we want to make bread.
With two handful of trachanas made soft in lukewarm water for 1 kg flour, with this dense batter we start making bread. The secret is to maintain the same temperature during the whole procedure.
The recipe could be simpler to make "flower bread" but with trachanas the taste which is left is buonissimo/ very very good
