Makes 4 serves
800 grms pork fillet
6 big portobellos or shitake mushrooms,sliced
1 dry onion peeled and chopped
1 glass of fresh orange juice (use it to marinade the meat)
A handful of thyme
1 Ĺ tea sp salt
ľ tea sp pepper
ľ tea sp sugar
1 glass white semi-sweet wine
For the puree
4 big potatoes
1 Ĺ glass of soy milk or cow milk(your choice)
Salt ,pepper and nutmeg
3 table sp olive oil
The important thing in this dish is to choose the right part of meat. I use pork fillet,sliced in medium to large size slices.
Place them in a flat surface and hit them from both sizes gently, to flatten them.
Put them in a bowl, and seasoned them with salt ,pepper and thyme.
Add orange juice and put the slices in the refrigerator for 5 hours(at least).
Use a wide pan to cook the meat .
Add olive oil, chopped onion, mushrooms and sugar. Heat gently in slow fire.
Cook for 10 minutes.
Add the meat slices and salt,pepper, and cook them from both sides for 10 minutes.
Then add the orange juice of the marinade and the wine.
Braise for 15 minutes till the sauce is thicken.
To make the puree
Peeled the potatoes and slice them in large cuts.
Boil them in salty water for 25 minutes.
Drain them and mash them in a bowl.
Add salt ,pepper and nutmeg grinds .
Add olive oil and milk and mix them all.
Mix till the liquids absorbed.
Serve it hot.
