This makes the perfect amount of delicious, tangy lemon curd to fill a layer cake or accompany scones, fruit tart, or cheesecake.
Ingredients
1/2 cup fresh lemon juice
2 teaspoons finely grated fresh lemon zest
1/2 cup sugar
3 large eggs
3/4 stick (6 tablespoons) unsalted butter, cut into bits
Method
Whisk together juice, zest, sugar, and eggs in a 2-quart heavy saucepan. Stir in butter and cook over moderately low heat, whisking frequently, until curd is thick enough to hold marks of whisk and first bubble appears on surface, about 6 minutes.
Transfer lemon curd to a bowl and chill, its surface covered with plastic wrap, until cold, at least 1 hour.

Dear Mr Oliver,
This year, my year 6 class learned about healthy eating. We watched "size me up" and your programme "Jamie Oliver's food revolution". We researched the facts on healthy eating and presented the facts to a school assembly. We showed the school snippets of your programme and explained to them what it was that you are trying to do.
I would like to congratulate you on your hard work, getting children to understand what the consequences are if they continue to eat the wrong foods. I am very luckly as I come from an Italian background and my mum and grandmother are constantly cooking great food. I enjoy helping with the cooking and making gnocci with my grandmother. I realise not everyone is so lucky.
At my school we have a vegetable garden, a few composte bins and we recycle everything.
Keep up the great work even if it does become hard at times. You reallly are changing children's eating habits for the better.
