lobster spaghetti with tomato sauce

i think its one of the most tasty spaghetti dishes someone can made,to enjoy a night with friends

Ingredients
6 serves
1 1/2 -2 Kgr lobster
550 grms spaghetti
1 big onion(just peeled)
some twigs of thyme and basil
pepper seeds
1 1/2 tea sp sea salt
for the sauce
4 medium size matured tomatoes(peeled and chopped)
1 onion (peeled and chopped)
2 cloves of garlic
a handful of thyme and basil
1/4 tea sp oregano
1/45 tea sp sugar
1 cup of olive oil
1 glass white semi dry wine
pepper(depends how spicy you like it)
1 tea sp of salt(dont add to much salt cause you gonna use the stock of the lobster which already is salted)
30 grms of dill(add it in the end)

Method
Fill a casserole (3/4 of it) with water and salt it.Put the herbs and the pepper inside.
Boil the water and put the lobster in.
Set the fire in medium mode, and boil the lobster for 15-20 minutes(the boiling time depends on how big is the lobster.The smaller the lobster is the less time you need to boil it).
Set the lobster aside and drain the stock. Keep a portion of the stock aside(1 1/2 glass)to use it for the sauce.
Put the stock in a new casserole and boil it again.When the stock starts to boil add the spaghetti and boil them for 7 minutes.
Drain the spaghetti and keep them hot, while preparing the sauce.
In a deep wide pan, add the onion and top it with the herbs and the sugar.
Add the oil and heat it, while mixing the onion and herbs.Use a wooden spoon to mix them.Cook until the onion get a brownish color,and then add the wine. Let the wine be evaporated and add the tomatoes pulp.Add oregano and salt.
Mix well and cook for 4 minutes.Then add the lobster stock and set the fire in low mode. If it need, add a half of glass of lukewarm water. Let the sauce be cooked for 20 minutes till thicken. Put the spaghetti in a big wide baking pan and add some olive oil(2-3 table sp)on top. Mix them and then add the sauce . Mix gently the sauce with the spaghetti. Let the food \"rest\" for 5 minutes and then serve.....decorate with dill or parsley.
PS: when i made this dish i boiled with the lobster some crayfishes too.This gave an extra taste to the stock. You can do the same adding shrimps or mussels...or even better both...the taste will skyrocket.....

yes, but what do you do with the lobster, throw it away?? it doesnt mention it after settin it aside!!

great work m8, i've tried this recipe and i have to confrim that's it's absolutely perfect. Although i've made one change, instead of dry white wine i used one shot ouzo ;-) highly recomend this!<br /> take care!!<br /> greeting from greece!!
