Ingredients
1 kg fresh green beans
2 medium sized onions
1/2 - 1 tsp tomato paste (dissolved in a little bit of water)
1 head of garlic, peeled (around 8-9 cloves)
2-3 meduim sized tomatoes
1/2 cup olive oil
salt and pepper to taste
Method
Peel the garlic.
Cut the onions into small wings.
Dice the tomatoes.
Cut the beans into 1-2 inch pieces.
In a pressure cooker, put the onions and garlic (with a little bit of vegetable oil) . When they start to colour, add the beans. stir for a couple of minutes. When the beans colour too, add the tomato paste and the diced tomatoes. Cook for about 15 minutes under pressure. Add the salt and pepper. Let it cool for a while (10 minutes) and then, add the olive oil.
Could be served warm or cold, with pita bread on the side.
Typical lebanese side dish.
