macaroni cheese

this is so tasty and yummy !!!!!!!

Ingredients
• 1 small onion, peeled and finely chopped
• 1tbsp olive oil
• 175g dried macaroni
• 25g butter, softened
• 25g plain flour
• 275mls milk
• 150g grated strong chedder
• Pinch of nutmeg
• Half vegetable stock cube
• 4tbsp chopped fresh basil
• Salt and pepper

Method

1)Warm the olive oil and add the onion, then cook for two to three minutes to soften.
2Add the milk, and the stock cube to the oil and onions, then bring to the boil.
3Cook the macaroni in plenty of boiling water, until just cooked, then drain well. Add a tbsp of oil to stop the pasta sticking together, and mix well.
4Meanwhile, mix the softened butter and flour together to form a paste, this is called a roux.
5)Once the milk is boiling, turn down the heat to a simmer, then whisk in the butter and flour mixture and cook for two mins.
6)Take off the heat and stir in three quarters of the cheese.
7)Place the cooked macaroni into a large bowl, then add the cheese sauce. Add a pinch or two of nutmeg, pepper, salt, and the basil. Spoon into an ovenproof dish, top with the rest of the cheese and brown under a hot grill, or in the oven for about ten mins.
8)Mmmm! Enjoy your scrummy macaroni!
