made and eaten tagliolini

when your neighbours\' hens make too many eggs it\'s time for you to prepare these wonderful tagliolini

Ingredients
neighbor\'s hen\'s eggs
leek
salt
olive oil
squeeze of lemon juice in pasta dough
the rest of self milled grains (spelt, saraceno, buckwheat ....
durum wheat flour
ricotta (cottage cheese)

Method
......... 2 whole eggs, a little water, your integral flours, the durum wheat one and some 00 flour till the dough is kneadable.
Let it rest.
Finely slice a piece of leek and let it go on low heat with some olive oil , a pinch of salt and some good ricotta.
The time your water boils your pasta will be sufficiently dry to be transformed into tagliolini you can directly toss into the salted water.
Just toss them into the leek/ricotta with, maybe, a grinded spread of fresh pepper

When I went to a cooking school in Florence I was told that White Lily flour is a good approximation of 00 flour, and I have had good results with it in making pasta. If you don't live in the "states" you might try the King Arthur Flour website... or www.thebakerscatalog.com to order online

Madamada, I have trouble getting 00 flour. Is it of a finer milling? I am going to try this with plain flour and hope for the best. My neighboour doesn't have any hens, pity, so it'll have to be free range from the store instead.
