Boil your potatoes, roast the chopped slices of coppa stagionata together with dried rosemary in a lightly oiled non sticky pan. Add the drained potatoes mashing them with a fork, let dry and roast the side with the coppa stagionata crumbles, adding some grated parmigiano on the upper side so that it melts and goes into the mashed poatoes.Turn upside down your frittata till it is crusty and a little browned on both sides.
