mushroom soup

easy to cooked soup for the cold days of winter

Ingredients
4 serves
150 grms shitake mushrooms chopped
A bouquet of simetzi mushrooms chopped in medium size
150 grms enoki mushrooms
150 grms king oyster mushrooms
150 grms porcini(fresh or dried)
1 medium size onion chopped and peeled
A handful of parsley /chopped
¼ cup of olive oil
1 ½ tea sp salt
½ tea sp sugar
½ tea sp dried basil
¼ tea sp pepper
1 glass of rose semi sweet wine

Method
Chopped all the mushrooms in medium size cuts and season them with salt ,pepper and olive oil (just drops). Set them aside and sauté the onion with olive oil and some sugar. Set the fire in medium to slow mode and let the onion get brownish color. Add the chopped mushrooms and mix them all gently while cooking them for 5 minutes. Add the wine and let its flavors evaporated …….
Add the basil ,the parsley the pepper and the salt and 300grms of lukewarm or hot water(not too hot). Set the fire in slow mode and let your soup cooked slowly. This will give extra taste to the soup(believe me). After 15-20 minutes the soup is ready. I f you like in the end you can drizzle a hard cheese on top and some lemon juice.
