in a cold sunday evening it\'s what you call comfort food after a good veg vellutata soup
Ingredients
strisulis - three handfuls (stripes of unsalted fresh cheese) cut from the latteria cheese when it\'s put into the wood frames to be pressed and take its round shape
1 shallot
1 medium potato
s&p
evo oil
parmesan
Method
let the shallot you finely sliced become soft in a veil of evo oil, on very very gentle low fire. Boil the potato you diced into salted water until cooked, 10 mins., mash it with a fork in the pan where the shallot is waiting for it.
Mix the cooked stuff with the cheese in stripes in a bowl, salt and fresh ground pepper, a handful of grated parmesan and toss it all into a hot non sticky pan or into your iron skillet.
Let it melt and get well roasted and crunchy on both sides turning it with the help of a flat lid, as one does with a frittata.
Enjoy with a glass of refosco and a panino of durum wheat you warmed in the oven for a few mins
