I post here this recipe to find it the next time I want to do a real good pizza
100 gr sourdough
600 gr 00 flour
3 piches of salt
4 spoons evo oil
300 gr water
a teaspoon of fresh yeast
3 medium mozzarelle
2 hg ham (Praga and Parma like one)
My sourdough has been rinfrescata (fed??) yesterday after being in the frige fofr a few days. I took it out this morning and at 4 I mixed the ingredients for my pizza dough.
I let it rise in an oiled bowl till half past 6, covered with a kitchen towel some freezer plastic bags on top and another towel to let it keep its humidity.
With that amount of dough I made two oven trays of pizza, adding three chopped mozzarelle, 2 hg of ham, fresh passed tomatoes, capperi sotto sale, black olives, oregano and a thread of oil on top
Fan assisted oven at 250į for 11 mins
p.s. I\'m not so sure I\'ll come again to this recipe of a pizza made on an \"augusy\" day :lol:
