  • half cavolo romano
  • peperoncino
  • garlic
  • salt
  • goat smoked cheese from Canarie
  • montasio cheese Friuli
Olive oil in the pan a tiny bit of peperoncino and garlic, while they let melt their tastes I finely sliced half a cavolo romano for us three and let it become soft but not dissolve with the aid of some salt, I took them away from fire and while boiling in salted water the orecchiette I diced both Canarian and Friulian cheeses, when the pasta was almost ready I tossed the cheese into the pan added a little pasta water some more ev olive oil and that's it.

Enjoy with fresh grated parmigiano on each plate

To cheer up in a rainy Saturday of 2010 what could I do better than use the brilliant green of a cavolo romano, the mature red of last year's peperoncino, and make them meet in my pan with tasty cheese from Canarie and Friuli ...........
