First of all you must have in your fridge a petto di pollo in slices, a jar of red/yellow peppers already in stripes. Into a large pan put some olive oil and let the meat slices go until lightly colored with a finely chopped scalogno, add salt, two tbsp of colored peppers out of the jar, a knob of butter and some freshly milled (?) white pepper. Keep a while covered on low flame while you are cooking your pasta, so as to have it ready. You then sit at table and let it rest on fuoco spento while enjoying the primo piatto. The secondo will make your commensali happy I hope as it did with mine
