preserving rocket - rocket oil

When I buy rocket I always buy more to make this rocket oil.

Iīm calling it oil because itīs only parts of a pesto, there is the parmesan cheese and roasted pine nuts missing, and thatīs got a reason. A whole pesto with all the ingredients goes bad much quicker than without cheese and nuts. Apart from that I like to add these ingredients just before eating - tastes better in my opinion!

I use this rocket oil for many dishes, the known spaghetti with pesto, of course, then there would be a salad made of tomatoes, mozzarella and a dressing made with this oil, several sauces and raguīs, you can also find it used with asparagus if you look through my recipies.

I will add more and more recipies in which I am using this oil, so check on my blog every now and again!

Ingredients
150 g rocket

8 tblsp olive oil

1 tsp salt

1 tsp pepper

1 clove garlic

-------------

olive oil when keeping in the fridge

Method
Put all the ingredients in a high narrow bowl and blend with a hand blender until itīs a smooth mass.

Pour in a jar (best would be sterilised) and slowly pour as much olive oil on top as you need to have the surface covered or pour the rocket oil in ice cube forms and freeze.

I found this recipe very helpful. I am growing my own in an allotment scheme this year. I have a bumper crop of rocket and don't wish to waste it. I like the fact that I can add the other ingredients later.
