I´m calling it oil because it´s only parts of a pesto, there is the parmesan cheese and roasted pine nuts missing, and that´s got a reason. A whole pesto with all the ingredients goes bad much quicker than without cheese and nuts. Apart from that I like to add these ingredients just before eating - tastes better in my opinion!
I use this rocket oil for many dishes, the known spaghetti with pesto, of course, then there would be a salad made of tomatoes, mozzarella and a dressing made with this oil, several sauces and ragu´s, you can also find it used with asparagus if you look through my recipies.
I will add more and more recipies in which I am using this oil, so check on my blog every now and again!
Pour in a jar (best would be sterilised) and slowly pour as much olive oil on top as you need to have the surface covered or pour the rocket oil in ice cube forms and freeze.
