  • For the Salad
  • 1/2 white cabbage
  • 2 - 3 carrots
  • 1 - 2 red skinned eating apples
  • chopped dates (optional)
  • For the Dressing
  • 2 parts extra-virgin olive oil
  • 1 part balsamic vinegar
  • generous pinch salt
  • generous grind black pepper
  • 1 tspn mayonnaise
  • 1 tspn wholegrain mustard
Cut the core out of the cabbage and place in a food processor, cut the carrots into chunks and add to the food processor and blitz until roughly chopped. Put into a serving dish. Wash, quarter and core the apple(s), and cut into small chunks. Add to the carrot and cabbage. Add the dates if using.

If you don't have a food processor, very finely slice and chop the cabbage, and grate the carrot, before adding the apples and dates, if using.

In a separate bowl, put all the dressing ingredients and whisk thoroughly to mix, check the taste and adjust if required, then pour over the salad and mix well. Serve immediately.

A light and tangy salad with a hint of sweetness, popular with children.

Method
