  • 4 eggs
  • 8oz rice flour or plain gluten free flour or plain flour
  • 8oz butter, margarine or coconut oil
  • 6oz caster sugar
  • 1 500g punnet ripe plums
Grease a loose-bottomed 10 inch flan dish and place on a baking tray. Preheat your oven to 160C. Stone and quarter the plums. In a large bowl, cream together the butter and sugar, then beat in the eggs one by one. Then add the flour and stir well. Alternatively, put all the cake ingredients in a food processor and blitz until just combined.

Pour the cake mix into the flan dish, then arrange the plums on the surface in a pattern of your choosing. Bake for 20 - 30 minutes until golden brown and firm to the touch. Remove from the oven and cool. Remove from the flan dish, sprinkle with caster or icing sugar if desired and serve with whipped cream (optional).
