while the rice is boiling in salted water you have plenty of time to prepare all the vegs you want to mix with it after 14 mins
Ingredients
boiled ribe rice
leek
celery
shallot
diced pumpkin and perini tomatoes
evo oil
marjoram
courgette\'s grilled medals
Method
I started with leek and shallot in evo oil together with a little piece of celery, letting them go gently for the time I diced the pumpkin and tomatoes after adding a little salt.
While the vegs became soft but not dissolve in a mashed puree, I sliced a medium courgette and grilled on a steak pan. By the time the rice was cooked and drained I had my green medals to put on top sprinkled with marjoram crumpled leaves.
Parmesan on top of all after mixing it and adding a thread of oil
