............when I decided that after a few days of mozzarella and tomatoes everyone stops saying it's a fresh summer dish and wanted a riso saltato for supper ........ I discovered that lots of peppers where hidden under the leaves.
So with many of them 1 little invisible aubergine and two tomatoes a pera costoluti and a little tender heart of celery I managed to have a colorful tasty sauce for my rice. I started with peppers thorn by hand and let them almost stick to the pan with garlic and olive oil after adding a little salt. Then the diced aubergine, and the sliced juicy ripe tomatoes. The basil leaves at the end when I turned the fire off.
I let 8 handful of ribe rice boil in salted water for 14 mins and tossed it into the sauce after stopping it cooking any longer under the cold tap water.
