chop 1 large onion and let it go on low heat with some olive oil and salt, when tender add half a glass of vinegar and let it evaporate.
lay the fried sardines in a large bowl (or square or rectangular contenitore) and alternate them with the onion
this dish can be eaten if not finished for some days becoming even tastier
I think it was a way to preserve fish the days the pesca had been abbondante
