makes 4 serves
12 tiger shrimps
1 big onion peeled and chopped
2 tiny zucchinis
2 small size potatoes
1 carrot peeled and chopped in cubes
a handful of parsley
1/2 cup extra virgin olive oil
1 glass fine muscat white wine
lemon juice 2-3 tea sps
salt and pepper and a pinch of sugar
This is a quick enough soup can be eaten a s a main or first dish.
Saute onion, zucchinis,potatoes and carrots in a deep casserole,with extra virgin olive oil.
Bring them to brownish and add sugar, salt and pepper and the wine.Cook for 3 minutes and add 6 glasses of water. Close the casserole and cook for 15-20 minutes.
The last 5 minutes add the shrimps and the parsley, and cook for 8-10 minutes.
Your soup now is ready.....
