the above ingredients are for the tagliatelle dough, while this is resting wrapped in a film you can go around to see what you can put in the sauce for them. In my orto I found three tiny zucchini with their flowers. marjoram, and to these added some finely sliced leek and two grated carrots.
2 eggs (Renata\'s hens)
home milled flours a handful each:
Half grano duro half 00 flours as much as needed
a tbsp ev olivveoil
half a taiýt-glass (the one used in osterie to serve wine) of white wine
a squeeze of lemon
a pich of salt
I usually start with the whole eggs to which I add all the ingredients, the home milled flours first and the grano duro and wheat till the dough is good to knead without being too sticky.
For the sauce I added some water of the boiling tagliatelle to the sliced vegs letting them go on low fire.
