strawberries in limoncello with mascarpone-cream

I love strawberries, my absolute favourite fruit! I was very happy to get some on the market today so of course had to create a new dessert. As you can see on the photo I´ve taken a jam jar. I thought this could be a nice dessert to take to a picnic. You´ll need a cooling bag because of the cream, of course. Just place it between the bottles with drinks, that´s how I´d do it. This recipy is meant for 4 portions. In case you want to serve this to children, replace the limoncello with any sort of fruit juice you like or simply leave the limoncello without replacement.

Ingredients
400 g strawberries
1 heaped tsp• powder sugar
4 cl limoncello

1 tsp mint leaves, plucked in little pieces
------------------------
200 g cream
100 g mascarpone
2 tsp vanilla sugar
marinade from strawberries
------------------------
crema di balsamico

Method
Cut the strawberries in quarters (depending on the size) and marinade them with the powder sugar and limoncello for a couple of minutes. Turn them with a spoon every now and then so they´re all marinating equally.

Pour the cream, mascarpone and vanilla sugar in a high bowl and whisk until almost stiff.

Add the mint leaves to the strawberries. Let them marinate for another minute. Let the strawberries drip off, put them in bowls or jars.

Pour the marinade through a sieve and add it to the mascarpone-cream. Whisk the cream until it´s stiff.

Put the cream on top of the strawberries and add some drops of crema di balsamico.
