Ingredients
4 serves(about 8 medium size burgers)
1 kgr minced from calf, mixed with some mince from pig meat (700grms/200grms)
1 big onion peeled and chopped
a handful of parsley,mint and basil
150 grms bread (ground it in a multi chopper )
1 1/2 tea sp salt
pepper
a cup of milk
1/4 cup olive oil
1/2 cup warm water
300grms feta or other cheese you like
1 table sp vinegar
1/2 cup red wine
Method
Put the minced meat in a wide and deep bowl.
Add all the ingredients i have written above except cheese. Mix them together real good and make an homogeneous mass without liquid remains.
Set the minced aside (suggest you to put it in the fridge for 4-6 hours).
The next step is to give a round shape in the burgers but first you have to stuff it with the cheese. Place a big portion of minced in your palm.Then put a piece of cheese inside and on the piece (its optional) a leaf of basil or mint.
Close gently your palm and in this way the burger will get its shape. Close carefully the edges of the burger.
Place a baking paper at the bottom of a baking pan and place the burgers. Bake them in a preheated oven for 45 minutes in medium temperature.
I served these burgers with potato puree and basil pesto....
PS: i think that the best burgers are those that are soft and juicy...and i think iv got the secret ....... milk, vinegar and warm water is the secret to make juicy and soft burgers...
PS1: well i havent wrote about the pesto sauce that i think is known to most of you..but i will write down the way i made it....
you will need:
2 handfuls of basil (you know from those plant with the wide leaves)
2 cloves of garlic peeled
100 grms of matured yellow cheese(try parmesan or any cheese you like it ...but must be yellow)
80 grms pine seeds
salt
pepper powder(just a touch)
olive oil(add not to much but as much as to turn your sauce dense but not oily)
Chop all the ingredients(first the cheese and basil) in a multi choper.Then add all the other ingredients and in the end add the olive oil while by while....
