tasty vegetarian stirfry

Ingredients
1 small to medium carrot
1 small turnip
1 small sweet potato
2 medium size button mushrooms
1 small zucchini
1/4 mini red cabbage
1/4 cup red and green capsicum diced
handful of snowpeas
handful of round beans
1/4 stick of celery

1 lime
1 tsp olive oil

a small amount of the following ingredients:
lemongrass
corriander
thyme
basil
chives
shallots
oregano
baby spinach

sauce:
1/4 bottle of honey, soy and garlic marinate
a few teaspoons of water
4 tablespoons of barbecue sauce

Method
dice all of the main ingredients and put them into a container/bowl. grate the zest off of the lime and add this to this mixture as well. Shred the herbs and add them aswell.

Heat your frypan on a medium heat, (you'll need a decent sized pan) add the olive oil. Once heated throw the main ingredients in. Stir them so that they don't stick and allow to cook for approximately 10 - 15 minutes. Cut the lime in half and squeeze the juice into the frypan. Add the other sauce ingredients now too. Stir to combine.

Allow to simmer for a further 10 - 15 minutes.

Serve on a bed of rice and enjoy.
