dice all of the main ingredients and put them into a container/bowl. grate the zest off of the lime and add this to this mixture as well. Shred the herbs and add them aswell. Heat your frypan on a medium heat, (you'll need a decent sized pan) add the olive oil. Once heated throw the main ingredients in. Stir them so that they don't stick and allow to cook for approximately 10 - 15 minutes. Cut the lime in half and squeeze the juice into the frypan. Add the other sauce ingredients now too. Stir to combine. Allow to simmer for a further 10 - 15 minutes. Serve on a bed of rice and enjoy.
