tomato 'sauce' for pizza

Ingredients
Makes enough for 4 regular size pizzas.

2 large mugfuls of small,vine ripened tomatoes,finely chopped
3 tbsp sun- dried tomatoes, finely chopped
1 tbsp sun-dried tomato paste
2 cloves of garlic, finely chopped or crushed
1 handful of basil leaves, chopped
1/2 - 1 chilli, finely chopped
2 tsps olive oil
Salt and pepper to taste

Method
I'm not a lover of 'saucy' pizzas and prefer a chunkier, more intense tasting kind of sauce/salsa on my pizza. The original recipe was used to make a vegan tomato dip (adding a nut based cream cheese to the mixture) so i just left that out and turned it into a quick pizza sauce.

Just mix all of the prepared ingredients together and let it marinade for about 30mins before spreading on your pizza. You can also add oregano or other herbs to the mixture if you prefer....a few chopped anchovies mixed into the sauce also gives it a very intense flavour without tasting fishy.
