vegs and Asiago cheese in crosta

the time the fillo is ready to be stretched you can stew the vegs and heat the oven, then in 25 mins you have your wonderful salted torta ready to serve

Ingredients
home made fillo pastry
300 gr• flour
4 tbsp oil
6 or more mild water
salt

1 medium leek
2 carrots
a little celery
250 gr• cottage cheese (ricotta)
150 gr• Asiago cheese
some grated parmigiano
2 whole eggs
nutmeg
some grated stale bread

Method
knead the ingredients of te fillo pastry divide it into two pieces and let it rest for 1/2 an hour under a warm pan. Meanwhile stew the diced and finely chopped vegs with some olive oil until tender and not watery. Mix the ricotta with the diced Asiago with two eggs a little nutmeg salt and some grated bread, plus grated parmigiano.
Lay a sheet of thin rollpinned fillo on the oven tray, cover with the vegs and cheese and eggs mix, cover with the second sheet of pastry. Fold the hems going around as if it was a parcel you want to close. Make some holes with a fork after brushing the surface with some olive oil.
25 mins according to the oven at 180° or until its color says it is ready
