young baby spinach with caramalised walnuts and garlic prawns in a light citrus-chili-dressing

It\'s a really refreshing and light salad for a warm summer day!

Ingredients
try to get all ingredients from a organic marketeer:



500 gramms of baby spinach,

4 oranges

1 lemon

2-3 spoons of honey

2-3 spoons mild olive oil extra vergine

2 hands of walnuts

3-4 garlic cloves

250 gramms of prawns

sugar, freshly grounded black pepper and sea salt



Method
Please excuse my English.....be happy that you don\'t have to hear
the German accent! ;)

dressing:

Rub off the zest of the lemon and one orange. Press out the orange and
lemon. Mix the olive oil with the orange juice, add lemon juice, but be
carefully...not too much! Stir in the honey and season it to taste with
sea salt und freshly grounded black pepper.

If you like, you can add a little bit Dijon mustard. I add a chopped
chili, too!! :)

walnuts:

Heat a pan with a cup of sugar and a little bit of water...let it
caramalise and put in the chopped walnuts...don\'t chopp them to
much....bit pieces are welcome... ;)

But becarefull with the heat...if the caramel gets to hot
it\'s getting bitter....go back to the startline! ;)

oranges:

Take the 3 left oranges...you can peel the zest for decoration
or just cut out the filets...

prawns:

peel them and wash them....pat them dry and heat up a pan
with oil and the chopped garlic cloves...roast the prawns for a minute
from each side...drizzel some lime juice over them.......



Wash the salad and mix it with the dressing. Top it with
the walnuts, orangefilets and the prawns right from the pan....

Serve it with fresh ciabatta...a little bit of orange zest and mint in the dough is great!!

Hi there! that was an excellent ideai!!
I added a bit of bacon to it as well, small crunchy bits.
