Great with green salads and bitter leaves like endive or radicchio.

Put all your ingredients into a jam jar. Shake, taste and season again if needed until your dressing is perfect. You may need to add a little more vinegar or oil to balance it.

* 5 tablespoons white wine vinegar
* 4 tablespoons walnut oil
* 115ml/4fl oz crème fraîche
* 1 teaspoon Dijon mustard
* sea salt and freshly ground black pepper
* a handful of chopped parsley leaves
* 8 tablespoons best-quality extra virgin olive oil

all those asking about substitutions for walnut oil - try a spoon or two of walnut vinegar in place of one of the regular vinegars. Maille make one and it's available in most good supermarkets

Excellent, I made it to the letter and my young boys ate all their salad!
My eldest licked the spoon and the mixing jug clean.

Can we replace the wallut oil by olive oil? or vegetable oil? if yes same doses? if not what can we replace wallnut oil with?

Guys from Brazil, it is not so hard to find Oliver's Book here ! Thare are both english and portuguese versions !
Try Saraiva or Cultura and you will find all of them !
