I made this a while ago and it was fantastic! I used some odds and ends of old bread (including some with rye) and it turned out really well. I was a bit dubious about the combo (bacon, anchovy, sage, rosemary, AND cheese, all at once?) but the flavors are really balanced. Will definitely make again, once the savoy cabbage starts turning up the veg box.
Made this for friends last weekend. I used Italian bread instead of the sourdough and only one tin of anchovy filets and it was perfect! Served it with a couple beers and it was a big hit. It's not as good leftover...bread gets a little too soggy, so have a bunch of friends over and eat it all up. Yummm!
