king of puddings

Preheat the oven to 150ºC/300ºF/gas 2. Separate 3 of the eggs. Put the yolks into a bowl with the remaining whole egg and beat together. Add the milk, breadcrumbs and 85g of the sugar. Put the jam on the bottom of a pie dish and spread it evenly. Pour the custardy egg and milk mixture over the jam. Bake in your preheated oven for 1 hour or until set.

Whisk the remaining 3 egg whites until stiff, then slowly add the remaining sugar until it is all mixed in. Pile it on top of the custard, then bake in the oven for a further 15–20 minutes until the meringue is set and lightly browned.

• 565ml milk
• 115g fine breadcrumbs
• 225g sugar (preferably vanilla sugar)
• 4 level tablespoons jam (raspberry is really nice)

1. Budley Sat 09 Jan 2010 @ 19:57 This was my fav. pud as a kid. My mum made it all the time, exact same recipe except she put the egg custard on the bottom, covered that with a layer of strawberry jam, then covered it with meringue. Oh, and not to be sexist about it, it was called Queen of Puddings!!!
2. Shruti Mon 09 Nov 2009 @ 16:57 Excellent recipe... Although mine turned out a littlle too sweet... I guess having it with a mug of coffee (without sugar) would be perfect...
I suppose topping it up with whipped cream, fruits & nuts would be an excellent way to impress people :D
I used three eggs in my pudding in order to reduce the smell of egg.
I did not have vanilla sugar, hence, I used vanilla essence in the middle and top layers of the pudding.
My family and I loved the recipe.

7. Renée van den Hoek Sun 08 Mar 2009 @ 19:03 After 1 hour in oven (150ºC) the pudding was still not set. I turned the oven to 175ºC, but after 3/4 hour extra, the pudding was still not set. I put the whisked egg whites on top and waited 18 min. When it was lightly brown, I took it out of the oven. The jam had become liquid on the bottom. Everything tasted very very sweet and it still was very weak. What did I do wrong??? The pudding seemed to be so tastfull to me. I was very disappointed. Please help this Dutch housewife...
so I can try it again.
