must-try red cabbage braised with apple, bacon and balsamic vinegar

method


Pour a good lug of olive oil into a saucepan, get it hot and add the bacon and fennel seeds. Cook until golden then add the onion and continue to cook, with the lid on, for a few more minutes until golden and sticky. Add the apple, followed by the cabbage chunks, salt and pepper and the vinegar, and stir everything together well. Put the lid back on and continue to cook on a low heat for an hour, checking and stirring every so often. You will end up with a gorgeously sticky-sweet cabbage dish that you’ll want to eat immediately, straight out of the pan! Or, if you can wait long enough, scoop it into a serving dish, pop the butter on top and sprinkle over the parsley.

• olive oil
• 250g smoked streaky bacon, finely sliced
• 1 tablespoon fennel seeds, bashed
• 1 onion, peeled and sliced
• 2 good eating apples, peeled and chopped into 2.5cm/1 inch pieces
• 1 red cabbage, outer leaves and core removed, chopped into irregular chunks
• sea salt and freshly ground black pepper
• 150ml balsamic vinegar
• a knob of butter
• a handful of chopped fresh flat-leaf parsley leaves

Jamie, twice in one week you excelled. I cooked your red cabbage but used Chinese 5 spice as my pork filet accompaniment was the Chinese Red Pork, soaked overnight and then cooked. Yummie - and so say the other 5 of us........

Jamie...thank you so much...great recipe and it tasted delish. for sure will make it again. i actually didn't have fennel seeds at home and i tried dried dill and oregano instead...cuz dried dill has a little bit of licorice taste to it...anyway...it was great...thank you.

This "veggie" dish was delicious. It made the whole house smell wonderful when simmering! I have included a few definitions to clarify some terminology. VEGGIE dish means main ingredients are vegetables. VEGETARIAN means there are no meat products. VEGAN means that there are no meat or dairy products. This recipe can be made all three ways -- just delete and then add what suits your pleasure. The main ingredients are the same: cabbage, onions, fennel seeds, apples and balsamic vinegar. ENJOY!

This is a common German dish. I grew up eating a version of this and never tire of it. It is fabulous. Any vinegar can be used. Vegetarians can leave out the bacon. One head of cabbage makes a lot, but it freezes beautifully.

Great dish, the first time I had this dish was years ago, from Margo Oliver's recipe book. It has since then been passed on from generation to generation in our family. It has truly become a staple of all family celebrations. Amazing flavor and complexity for a simple dish. The intensity increases within 24hrs, but does not overwhelm as a side dish.

Hi there. I've just cooked this dish and it's gorgeous, delicious, amazingly tasty! it really makes you feel like eating it straingh away from the pot! I've used only the red cabbage, the onion, bacon and balsamic vinegar plus a bit of sugar as it felt a bit too sharp. It's delicious! Tastes so good, that you can even have it by itself. This proves that when cooking, you can leave a few ingredients out or replace them with whatever you think would go well with the rest of them in a receipe. So you can eat good food on a budget and really enjoy it!!!

One major problem re this website: it needs a search engine for recipes using a main ingredient, for example red cabbage. It took me ages to find this recipe again as I couldn't remember the exact title of it.

hi there! this recipe sounds delicious, even if i'm not a big red cabbage fan. I've bought a red cabbage a few days ago and I was looking for a nice recipe to try. I'm going to use this one. For all the people that complained about this recipe being called a veggie one, get over with it! If you're a vegetarian, just skip the bacon! I'm sure it will be delicious anyway! I will never be able to understand why english people have to moan all the time about the tinniest problems, instead of finding a solution! A very good traditional recipe.

To clarify for vegetarians: VEGGIE in case generally refers to vegetables, not vegetarians, so a Veggie recipe on this site means that it is a vegetable recipe not a purely vegetarian one.

Hi Jamie - you "ruined" my early evening last night (only joking) - Curry dinner was ready and then I found your red cabbage on your site, whilst searching for something else. It brought lots of memories back - when my late mother used to cook this a lot. Since BV was not around then she just used normal vinegar, a tsp. of honey (to offset the tardiness) and some caraway seeds. And thats how I have been cooking red cabbage whereever I lived in the world. The trick is NOT to overcook the cabbage - it should have a slight crunch still. All my indian friends simply love it here in Kerala and up in the North. So, instead of tucking into the meat curry, I quickly mad Mom's (and Jamies x) Cabbage and we ate the lot with Chapatti - and I went to sleep with lots of fond memories. Thanks Jamie

Thanks Jamie - you just "ruined" my evening here in South India. (I am only joking of course) My mother in Germany used to cook this red cabbage, only they did not have balsamic but only normal vinegar. A tiny bit of sugar (or sweetner) can be added to take the "tartness" away for those who do not like the original version.
We are off to London-visiting-soon and no doubt I will have my usual excess luggage, carrying all the books, which we can not get here, back with us.

Cooked it and loved it. Beautiful keep those dishes coming. But one question why does a vegetarian dish has bacon in it. As far as i under stand vegetarian dish is only vegetarian and no meat of any sort. Any way thanks for teaching something new

Jamie you are an inspiration to this granny, who had Welsh/English parents. My mom cooked a lot like you, lots os little tastes and she used her hands to mix.
