plum honey cake

Preheat the oven to 180C/gas 4. Cream the butter and sugar until light and fluffy. Whisk in almonds, honey, vanilla seeds and eggs. Place mixture in a greased cake tin and add the plum quarters. Bake for 20–25 mins, brushing with glaze towards the end of cooking. Remove from oven, cool, then brush over more glaze.

ingredients

• 200g butter
• 100g sugar
• 150g ground almonds
• 3 tbsp best-quality honey
• 1 vanilla pod, split and seeds scraped
• 4 large eggs, beaten
• 4 ripe plums, stoned and quartered

Glaze
• 30g butter, melted
• 1 tbsp honey

2. joanne Sun 06 Sep 2009 @ 13:30 i thought it would have had some flour in it because it just didnt happen. not a bit like a cake more like a soggy fruit quiche.
