This dessert is great for chocaholics and the refreshing pear juices cut through the rich flavor - great for any dinner party.

Preheat the oven to 190°C/375°F/gas 5. Roll out the pastry until ½cm thick and use it to line a 24cm tart tin. Leave in the freezer to rest for at least 20 minutes, or longer if you can.

Bake the pastry blind for around 10 minutes in the preheated oven, then remove, set aside, and reduce the oven temperature to 170°C/325°F/gas 3.

Mix your almonds, eggs, butter and sugar together and stir in the melted chocolate while it’s still warm. Pour the mixture evenly into the pastry case and then press the pears into the chocolate and almond mixture.

Bake the tart for 45 minutes until the pastry is golden brown and the chocolate and almond mixture is firm. Serve warm with crème fraîche.

• 125g butter, softened
• 95g caster sugar
• 185g dark chocolate, melted
• 3 conference pears, peeled, cored and quartered
• crème fraîche, to serve

I tried this for a dinner party and it went down a treat, though unfortunately it looked a bit overcooked cause i think 190 is way too hot. I think for fan oven i put it in at 170 and even think that is too hot. Maybe a fan oven at 160 would be ok.<br />

is it easy to make, or is it abit complicated. i have some pears, at home. and i googled a recipe with pears, and this came up! sounds delicious but is it easy?

Bren, baking blind means you have to use either baking beans (ceramic) or rice to fill up the pastry. without this, the pastry will puff up as you had already found out.

This was my dessert for Xmas last year, and it looked and tasted great. If I made it again I would stew the pears first, as they were a bit too firm for my liking. Otherwise, very tasty, and looked nice on the table.

This is so gorgeous and easy. I make it without the pastry and in individual ramekins. I like to stew the pears gently with some spices first so that they are soft when the desserts are cooked (doesn't take long without the pastry and in a ramekin). My other tip is to use Green & Blacks Maya Gold chocolate, a dark chocolate with hints of spice and orange zest. SUPER duper delicious.

just tried to make this and the pastry puffed up huge when i baked it in the oven for the ten mins like it said!!! i didnt use a tart tin cause i dont have one, i used a spring cake tin thingy - is that why?? can anyone help? thanks

Delicious & simple to make. I reduced the amount of chocolate to 150g, added a bit of milk to it when microwaving to keep it liquid and smooth. It was a huge hit!
