These biscuits are dead easy to make and perfect for a simple gift. If you fancy jazzing them up for Christmas, try using an orange in place of the lemons and add a pinch of cinnamon to your demerara – lovely and festive!

Beat the butter and sugar in a bowl with an electric mixer until creamy. Beat in the egg until the mixture is light and fluffy. Add the flour, lemon, baking powder and salt and mix until you have a ball of dough. Cover and place in the fridge for 2 hours, or until firm.
Preheat your oven to 180°C/350°F/gas 4. Roll out the dough on a floured surface until ½cm thick. Cut out shapes and place on a greaseproofed tray. Sprinkle with demerara sugar and bake for 10 to 12 minutes until the edges are light brown. Transfer to a wire rack to cool.

• 1 egg, preferably free-range or organic
• 200g plain flour
• juice and zest of 2 lemons
• Ό teaspoon baking powder
• a pinch of sea salt
• Plain flour, for dusting
• 3 tablespoons demerara sugar

I've just made these biscuits and they have turned out quite well. After reading some of the above comments, I decided to use only juice and zest of 1 lemon, though I still needed to add more flour to turn it in to a dough. I think next time I will use the juice of 1 lemon and the zest of 2 lemons to give the biscuits the citrus tang which makes them so tasty :-)

My mixture also came out as a cake mix. I made to biscuits anyway and they came almost like little cakes. They were very delicious eventhough they weren't bisuits. I think next time I make this recipe I would just bake it as a cake :-)

My mixture came out like cake mixture rather than dough despite adding a little extra flour and baking powder. Perhaps the recipe should be one large lemons or 2 small. I have put it in the fridge and will have to cook it as drop biscuits rather than rolling out as it is not a dough.

Do you really have to leve it in the fridges for 2 hours? im doing this for a school project called cook pack sell and i just dont have the time. do you think i could just put it in the freezer for about 10 mins???

As others have stated, my mix was also sloppy, more like a muffin mix. I added a little more flour but not enough to make it a dough, just enough so it was stiff enough to drop dollops onto the baking tray. They were a little bit cakey but were still delicious. I added crystalised ginger chopped finely and that worked really well. I'm intrigued to know what Jamie's recipe actually is as this is obviously not quite the right measurements.

Jjust waiting for the dough to chill but I replaced lemons for a spoonfull of honey and needed to add extra flour untill made a ball, cant wait to see what they turn out like. Kerry Stoke on Trent
