Pizza with smoked pancetta, mozzarella, fresh chilli and tomatoes © David Loftus

pizza with smoked pancetta, mozzarella, fresh chilli and tomatoes

starter
Smear the tomato sauce evenly over the pizza base. Tear the mozzarella into pieces and dob these over, then scatter over as much chilli as you like and season with salt and pepper. Lay the pancetta over the top so it will crisp up during cooking and the juices will cook into the pizza. Drizzle with extra virgin olive oil and cook until crisp and golden.

• from Jamie's Italy

ingredients

• 6 tablespoons tomato sauce
• 85g/3oz mozzarella
• 1 fresh red chilli, finely sliced
• sea salt and freshly ground black pepper
• 4 or 5 slices of smoked pancetta, thinly sliced
• extra virgin olive oil

3. Helen Wed 27 May 2009 @ 21:37 Judging by a shop bought pizza and past experience, a hot oven is quite good for pizza, because it will crispen up the dough as well as cooknig and melting the cheese and topping on top. Maybe 200C? Do that until it looks cooked. I guess you have to play it by ear really. If it's taking ages, up the temperature!
