Ok so I was looking for a good pork chop meal yesterday and this recipe seemed perfect only I didn't have the beets. So I thought about it a bit and I realized I did have apples and I know some of my fav dishes have apples and carrot, and apples go with pork. Of course I didnt boil the apples. I also decided to change the flavoring from the herbs and garlic with orange juice to a sort of cinnamon/nutmeg/allspice with lemon juice. And I cooked the pork as per the recipe and a little Jasmine rice on the side. I had extra apples so I made an apple crisp which went in the oven just after everything else came out and was done at just the right time. It all tasted fantastic. My husband was even stealing carrots off my plate. He said "You can watch cooking shows any time!!" (I have been watching Oliver's Twist on Netflix). All in all a wonderful dinner! Thanks for the inspiration!<br /> I realized as I ate the veggies that I have never really cooked veggies like this before. They were only ever something to tack on to the side of the meal or at best throw in to one of my one pot wonders. These veggies were almost the star of the meal and that was awesome!

Gemma's advice is solid and good. Soups are nutritive, easy & cheap, it's a safe bet. You should have your child eat soup every meal before the main plate, if your budget withstands it. Besides the nutrition itself, it keeps you from pouring large amounts of the main plate, which is often unnecessary since you'll be mid-filled by the soup already.
There's plenty of advice on this kind of healthy, cheap diets, you really should search a little. Keywords like "frugal diet", "cheap healthy diet" and such will turn out great food with a low budget, keeping the nutrition value all the same.

Hi Maria, I am also a parent and I don't have the biggest budget but want my son to get the vitamins and minerals he needs. I make a big pan of homemade soups for him every week, and it last him for a week. He loves it, and this way I can make sure everything that goes in it is good for him! It's very cheap and easy to do also.

Im a single parent of one i have a budget of £30 a week for food shopping an i have to buy breakfast lunch AND dinner, i cant seem to spread the amount through the week buying all my food like meat salad an fruit,plus they go off quick so its back to cheep an cheerful pizza an chips! I want my little girl to have all the essential vitamins that she needs as she is 5,any tips?
