- 8 slices of good-quality rustic bread
- 1 jar Jamie Oliver Italian herb pesto
- 12 slices cold rare roast beef
- 4 handfuls rocket or watercress, washed and spun dry
- sea salt
- freshly ground black pepper
To make one sandwich, spread some Italian herb pesto over 2 of your slices of bread. Drape some nice thin slices of cold rare roast beef and a few salad leaves on top of one of the slices. Sprinkle with salt and pepper, then squash the filling down with the other piece of bread and eat straight away with a nice cold beer.
