This is dead simple, completely versatile and absolutely gorgeous. It’s not a pretty-boy pie; it’s a proper, old-school pie that everyone will be over the moon to see on the table. I’m putting leftover white turkey meat to good use here, but you could also mix brown meat in there too.

Preheat your oven to 190°C/375°F/gas 5. Put your bacon in a large pan on a medium heat and add your thyme leaves. Add a lug of olive oil and the butter and let it all fry off a few minutes. Add all of your prepped leeks and fry them off for about 3 minutes so they are well-coated in the butter. Add a pinch of salt and pepper then pop the lid on top, turn the heat down to medium and let them cook away gently for 30 minutes, stirring every 5 to 10 minutes to make sure they don’t catch. There’s going to be enough moisture in the leeks to keep them happy in the pan so they should be soft and melt in your mouth once they’re done.

When your leeks are ready, add the turkey meat to them and stir. If you’ve got a bit of stuffing mixed in there you can put that in too. Add the flour, mix it in well then pour in your stock and stir again. Add the crème fraîche then turn the heat up and bring everything back up to the boil. Have a taste and add a bit more salt and pepper if it needs it then turn the heat off. Pour the mixture through a sieve over another large empty pan and let the wonderful gravy from the mixture drip into the pan while you roll out your pastry.

Get a deep baking dish roughly 22 x 30cm. Dust a clean surface and a rolling pin with a bit of flour and roll your pastry out so it’s about double the size of your dish. Crumble the chestnuts over one half of the pastry then tear a few of the sage leaves over the chestnuts. Fold the other half of pastry on top then roll it out carefully and evenly so you have a rectangle big enough to cover your baking tray. Don’t worry if a few bits stick out here and there.

Spoon that thick leek mixture from your sieve into the pie dish and spread it out evenly. Lay your pastry on top, tuck the ends under then gently score the pastry diagonally with your knife. Add a pinch of salt to your beaten egg then paint this egg wash over the top of your pastry. Pop your pie in the oven for about 35 to 40 minutes or until the pastry is puffed up and golden brown. When the pie is ready, re-heat the lovely gravy and serve with your pie, along with some peas tossed in butter, lemon, salt and pepper and everyone’s happy!

• 800g cooked white turkey meat, torn into big chunks (brown too if you want)
• 2 heaped tablespoons plain flour, plus extra for dusting
• 2 pints turkey, chicken or vegetable stock
• 2 tablespoons of crème fraîche
• 1 x 500g packet puff pastry
• 12 jarred or vac-packed chestnuts, roasted and peeled
• 2 sprigs fresh sage, leaves picked
• 1 egg, preferably free-range or organic, beaten

In case the 236 responses leave ANY doubt...this is a magnificent pie. Simply perfect for a wet windy Vancouver night. Our leftover turkey was screaming for love and love it found! Wouldn't change a thing except maybe to add more flour and stock (made homemade turkey stock...yummmm...ps - if you have never done this - you HAVE to - turkey stock is the reason I buy a nice fat organic juicy lovely...ok ok...) I would add more only to have a bit more gravy - as it was orgasmic. I used maple pepper smoked bacon - being Canadian and all....and it added a nice smoky flavour. PERFECT. Will make this for a dinner party and pretend that I had to sweat. Thank you Jamie - once again you have made me a rock star. All the best in 2012. SO deserved. <br />

Made just the filling with no chestnuts, but added left over sweet potato and turnip casserole from cookinglight. Also substituted Greek Yogurt for the creme fraiche. DELICIOUS. Ate it straight from the skillet, no baking. Will definitely make again with left over roast chicken.

I made this last night. The only changes I made were that, since I only had 1/2 a box of puff pastry, I chopped the chestnuts and mixed them in with the leeks and turkey, and baked it for only about 25 minutes. It was FAB! My husband wants to know when I'm making it again (after he ate 1/2 the the leftovers for breakfast). I want to adopt you Jamie! I'd make a great grandmother!

Made this today for my family of 6 and my brother's family of 4 - it fed us all and the gravy was just the business. My husband was suspicious of gravy with no gravy powder but is now finishing it off with a spoon! Its the first time I have ever cooked a home made pie and am so proud of the results - thanks for the inspiration. We served it with bubble and squeak which is a family favourite. Yum!

i changed this recipe to make it vegan by replacing the bacon with pumpkin and the turkey with Fry's vegan chicken nuggets. didn't add the creme fraise and used nuttelex as the butter. also used veggie stock and sweet potato and avocado mash instead of the pastry. was soooooo good! and healthy, and animal friendly <3

I made this pie on boxing day after having watched the christmas special from last year,went down a storm with everyone,even the pickiest of my friends and family.
I made it again today with chicken substituting the turkey and already can't wait for the snow to go so I can start growing my own leeks,just for this pie!

I am 10 years old I love this pie so much I decided to have a go at making it myself. My dad says his pie is better but I completely disagree.Iif you haven't tried it have a go, it's so simple even a 10 year old can make it (with a little supervision of course).

Waitrose sells bottled chestnuts, well the one in Southend had plenty of them the otherday when I made the pie for the second time. I also like plenty of pastry so make that and the steak and guiness pie with a base which makes it nicer when you have it cold as its easier to remove from the pie dish.

My wife has cooked this 5 times since Christmas and its just fantastic everytime.
My children leave empty plates, what a winner.
Only problem today was we tried Tesco and Sainsburys for the Chestnuts and neither had any in stock, the answer was its only a seasonal stock item.
Its such a shame because the chestnuts in the pastry are just fantastic.

This goes down fantastically. My wife and kids keep buying the ingredients then telling me to do it again. I have done it four times since boxing day.

It also goes down well substituting chicken.

If you haven't tried it with stuffing do so...it's even worth making fresh stuffing in advance if you haven't got any leftovers.

I substituted the meat for veggie chic( vegetrian chicken substitute strips- from vegetarian world - Bletchely) and missed out any other meat products to make this a vegetarian dish. It was delicious at Xmas, and i have cooked it since.

Jamie it would be good if you could give veggie alternatives in your recipies -it jsut makes sure we do not feel left out and can use some of your great user friendly ideas!

I love making this pie, I made it the first time over chirstmas for the family although it ended up being the biggest pie I had ever seen. Everyone liked it, even my sisters who dont normally like turkey (but we didnt tell them it was turkey until after they'd eaten it, they've been converted now). Infact my dad liked it so much that he took the huge amount of leftovers to work to brag about his pie then sat in front of all his work mates and devoured the lot. So all in all it went down quite well :)

Saw Jamie cook this on tv, and when he said 'You want some, don't ya?', I thought 'Too right'. I was 60 on 24th Jan, so just the excuse I had been waiting for, to cook this pie for a small gathering of friends and family. I wasn't disappointed, and neither were the guests judging by the empty plates! Everyone agreed it was delicious.
Followed it with Nigella's Ice Cream Cake with the same result.
Now I am inspired to cook a meal for Valentine's night.

Fantastically straightforward recipe. Made this on New Years Day and it was a big hit. A friend of mine was recently having people to dinner and was looking for something she could cook herself (she usually buys in dinner from a local restaurant) so I went over to her place and showed her how to do it - didn't do any of it at all for her - she just asked questions as she went along and managed it brilliantly - trust me - this was a major achievement. Made this Boxing day with all the leftovers, with my mum order a turkey for 14 people and in the end there only being 3 of us on the day!!! There are only so much turkey sandwiches I can take!!!! This was sensational. I'm not a big fan of sage and tythme but decided to try it anyway, and boy did it taste amazing, though I was even better the next day with the gravy juicies melding together perfectly. Now I'm back at University in student halls of residence i'm attempting to try it again on a smaller scale, and if all goes well serve it up to my flatmates on Sunday.

Jamie, I have just made this pie and I am eating every last mouthful as I type. It is GORGEOUS. I had to tweak it a little with what I had available, I used basil and chives instead of thyme and I added a clove of garlic to the bacon as it was frying. Didnt use chestnuts in the pastry either, I used mustard seeds instead - Perfect I can tell you!

thought it sounded great so made it on Sat after Xmas and my son had invited two friends round so it went down very well. 800kg of turkey is a load and certainly saw the remains of the turkey off. Only problem was that on TV Jamie had loads of gravy and I only had about two tablespoons! Told a girl at work who had videod it and she watched it and whereas recipe on website says two pints she says on TV he says two liters which would explain it but it was totally gorgeous and I didn't even bother with the chestnuts (don't like them) or the sage. Have put it in my cookery folder together with the fabulous stuffing they taught me on a Le Manoir cookery course!

We herein Australia got the same program, about the same time as England did. friend there made it and said wonderful/ I now have some left over turkey from a thigh roast last night so will do it this evening. Summer here though a cooler day today.. leeks VERY expensive.. so will use onions and sliver beet stalks (swiss chard) from the garden and mushrooms in lieu I think. Have the herbs fresh in the garden but chestnuts are out of my price range too so it might not have those.. a bit of Parmesan cheese maybe instead - goat Parmesan as I have problems with cow cheese and milk but not cream and butter (casein is not in the fat part of dairy). I also need to make my own pastry with spelt flour not wheat.. but still should be easy. My pastry is not as flaky and puffy as bought puff paste but is very nice all the same thanks to Stephanie Alexander. We will have it with the tops of the silver beet and maybe some carrots, and possibly some new potatoes dug yesterday.

Brilliant recipe. Couldn't believe how much my family loved it on Boxing Day. It almost wasn't enough! My 10 year old daughter had 3 helpings. After watchin Jamie cook this dish just before Christmas it has completely transformed my life! My husband who is no cook apart from his famous chili commented that if he had the mixer and stuff he would love to be able to cook like Jamie. At that time I had not bought him anything for Christmas and had no idea what to get. I went out the next day and bought him Kenwood Mixer and Blender, an apron and other bits and pieces. As I write this comment he is in the kitchen making his SECOND Turkey and Leek pie because the first was so fanstatic. Well i watched this on his show one Xmas Eve. Although we'd just got back from a gorgeous meal in a resturant, i could have eaten this immdiately...it looked gorgeous! My husband, Mother-in-law and myself, were all speechless whilst watching him put together this scrummy pie. I have been thinking about it eversince and am now going to Sainsburys to get the ingrediants. Wish me luck!!

I cooked this recipe on the 27th Dec and used our left over Gammon as oppossed to Bacon and it was without doubt the best meal of the whole holiday, amazing flavour, now cooking it again with chicken instead of turkey, cant wait!!

We made this with all of the leftover turkey we had at Christmas, and it was absoultely wonderful. We made alot, so we had leftovers the day after and they were excellent, I would highly reccomend this pie.

Saw Jamie make this on his Christmas program and thought it would be a good use for all the leftover turkey. What can I say? This dish was absolutely fantastic. I saw this program before Christmas. At the end of each dish - turkey pie, jerk chicken and Genaros pork especially - we were both saying "ah, look at that". The jerk ham with the fantastic coleslaw and the jacket potato - that's real, fantastic food that makes your mouth water and want to get in the kitchen. Anyway, the turkey pie - what a pie. I can't wait to go get my chestnuts and roll them into my pastry - everyone will be very impressed. I think this is some of the best cooking Jamie has done on the television.

Made this pie after Christmas and it was beautiful. I halved the recipe as there was only two of us and added dried Thyme to the pastry as I had used up all my chestnuts in the Christmas stuffing and it tasted wonderful. Would definitely make again and maybe try with the leftover chicken from Sunday roast.

We could'nt get chestnuts so used a mixture from my nut bowl. No fresh thyme to be got so had to use dried and I added a small glass of white wine with the stock. Wow Jamie it's a winner. Thankyou.

This looked fab on TV and it was fab in real life!!!! Our left over turkey has never tasted so good, made it the day after boxing day and everyone loved it. Didn't have enough leeks in the garden but it was still good. The gravy was amazing and a great idea. Have just sat down from eating dinner tonight where I used the last of the turkey and added in the ham we had left over, this time with more leeks and it was just as good, in fact I made two and put one in the freezer!!!!!!!

I e-mailed you earlier today, because my son and I had so enjoyed making this recipe together. Unfortunately, I forgot my real reason for contacting you. My son has a serious nut allergy, so I left out the chestnuts, and added a bit more sage to the pastry. Blue Peter always try to give a "nut-free" alternative to their recipes, and because of the very large number of people in Britain with nut allergies, it would be kind if you could find an alternative for them. I am sure it would increase your popularity. It is frustrating to find you can't cook a recipe that you fancy, and there is usually some tasty alternative!

Made this for 12 as Sunday lunch. It was awesome! Actually needed two packs of pastry so sandwiched the chestnuts and sage between them and made sure there was a really thick egg glaze. Delicious.

Confession Jamie this is my first recipe of yours I've ever coooked! I own your books,loving presents given to me my my sisters over the years...Now living in Texas and missing good english home cooking so last night made this dish, my husband and I loved it, the kids were unsure ("Mum it's got green bits in it!!")
Used Sour cream as Creme Fraiche is impossilbe to get hold of at sort notice.

I made this dish and I am not sure that the quantities are correct. I used only 1 kg of prepared leeks which was more than enough. Also I reduced the amount of stock to about 1 pint since the gravy was already very watery at that stage. I was unable to find any chestnuts (they are less of a staple here on the west coast of the USA), but the addition of sage to the pastry is brilliant.

As a way of using leftovers this is a good dish - it's much more interesting than a plate of sliced cold turkey, but the asian salad on this site has much more flavour. If you have any leftover turkey then you must make that recipe.

Saw Jaime making this, like everybody else. memorized the recipe, which is easy with most of Jaime's recipes. Made it with roast chicken (which I roasted especially as I had no turkey). Absolutely delicious. I can recommend chicken. Instead of chestnuts which I couldn't find, I used pine nuts which I roasted. Another great alternative:)

made this pie and it was great.
i didn't have all the ingredients so instead of bacon i used cooked ham, and cream instead of creme fresh and it tasted fantastic.
with the ingredients above it would feed 12 if served with mashed spuds and peas, i halved the ingredients and it was just right for 6 people.
i recon this would taste just as good if you used chicken instead of turkey, O... and the gravy you get from this is just magnifelly scrumshus.
well worth trying.

Liked the look of this the way Jamie used all the leek chopped. I always discard the very green bits, anyway just made the pie with the addition of ham pieces as well as cookedn turkeymeat. Used a bit more pancetta than recipe and it is a fabulous flavorsome pie. Nice bit of instinctive cooking. Thanks Jamie.

Really lovely pie. Swapped bacon for diced pancetta and gammon - made it it tastier and gave it a chunkier texture. Didn't really notice the chesnuts in the pastry though.

Cooked this pie for our family on boxing day - WOW!
Easy to cook and the best pie we have ever tasted, please make it and see for yourself.
We only used half the amount of leaks and turkey etc, but is was more than ample for four.

Wow. Just wow. I think that cooking leftovers is even better than the original feast. More relaxed, more inventive and much more fun to eat.. I was feeding four 10yr old boys for dinner tonight and this recipe got seconds from all of them. My favorite part was keeping aside some of the sauce for a gravy to pour over after... I'm going to try that with more of my pies, it is just delish!

Halfway through making the pie - not sure the filling will last until the pastry is ready as I keep eating it! The gravy tastes like soup, I could eat that on its own!

Dad just made this with the leftovers oh ny god how good is this pie, highly recomended by the whole family. A good pie isnt just for christmas, would work equaly good with cooked chicken, and i belive this will be making a welcome return to our table in the near future.

We watched the "Jamie Cooks Christmas" show on Christmas Eve in Melbourne, Australia. Everything looked very good until you got to the 'Turkey and Sweet Leek Pie'...and that looked outstanding! We tried it today, Boxing Day, with the leftover turkey. It tasted even better than it looked on TV. This is going to be a keeper for a long to time to come. My family says it is tradition from here on in; we may have to skip the roast turkey and move right to the pie! Thanks, Jamie. This one is a real winner. It was delicious!

I've been given my orders to cook this and the leftover Christmas Pud by my 15 year old son who only a year ago would have thought I was trying to poison him if I dished it up. But thanks to being inspired to grow my own veg after demanding your book for Christmas last year my son helped grow them and is now happy to eat them. I would like to say a BIG THANK YOU from my family and I for reinventing food and cooking in our house and no longer having to cook those awful nuggetty things.
