I always think it's brilliant if you can turn the humble carrot into anything remotely cool or credible, especially in the salad world. You deserve to have a medal if you can come up with something amazing. If you're lucky enough to have vegetables in your garden you'll know what I mean when I say freshness is everything. But those of you who haven't got a garden should buy the freshest-looking organic ones that you can find.

I use a mandolin to slice the carrots for the salad - it will give you long ribbony slices - but you can use a speed peeler or do it by hand with a knife instead. As long as your results are nice and crunchy, that's all that matters.

This is really good as a starter, or try eating it with some little kebabs if you're having a barbecue, or stuffed into some pitta bread with sliced grilled chicken.

First of all, slice the carrots or cut them up into fine ribbons, matchsticks or batons. Put them into a salad bowl with the coriander leaves and the sesame or poppy seeds. To make the dressing, finely grate the zest of the orange into a bowl. Add the orange juice, the juice of 1½ lemons and about 4 times that amount of extra virgin olive oil. Pound your toasted sesame seeds to a pulp in a pestle and mortar, then add to the dressing. Mix well, then season to taste with salt, pepper and possibly more lemon juice to make it nice and zingy so that you can taste it once you've dressed the salad. Once the salad is dressed, the flavor of the lemon will lessen, so get eating straight away.

all of us at home sit and watch your shows and love the way you cook and present the food. love your beautiful kitchen and kitchen garden too. one just feel like getting up and start cooking. what you have done with carrots and beetroots is amazing. i am going to try out these for my family and they are going to love it. how about some more of vegetarian cooking grilled or baked.

I have watched your show for years and always enjoyed your method of cooking fresh foods in a easy manner. These days we get so busy that cooking becomes a chore. I always look to your recipies for inspiration. My sister and I are trying to get healthy and lose weight without prepared packaged foods. Just wanted to respond to the comment left by j on 13 mar. I used Jamies recipes for a meal i cooked for my girlfriend, typical bloke cant cook but said i could, she thought it was fantastic. We are now married with 3 kids and i still cook for her using inspiration from Jamie, the kids love it more than chicken nuggets and eat healthy. So Jamie if you ever read this Keep up the fantastic work you do and thanks for the help in making the love of my life enjoy my cooking.

Not sure if everyone here are just sycophants, but this recipe is terrible. granted it is better than the usual english carrot recipe (i.e., boiled with no salt). Come people, jamie oliver is a good business, but his cooking is crap. get a serious cook book like il cuchiao di argent (the silver spoon). I mean how many french or italians cook jamie's recipes? none i guess.

Jamie! I love you! Not only because youre so adorably cute! But also because I have learnt so much from you tv shows and books. Im from Pakistan, and absolutely adore your simple, straight fwd and clean techniques.
