crispy tortillas with guacamole

These tasty, crispy tortillas with guacamole are superb for snacking on while you're watching telly. It's all quick and easy to rustle up.

Preheat the oven to 200°C, 400°F, gas 6. Meanwhile, remove and discard the seeds from the chillies, squeeze the juice from the limes, peel the avocados, remove the stone and chop them and roughly chop the fresh coriander.

To make the guacamole, mash or blend the chillies, lime juice, avocado and coriander until creamy but a bit chunky. Season with sea salt and freshly ground black pepper, and pour into a serving dish. Brush the tortillas with the oil, season, and then sprinkle with the thyme leaves. Lay them on a baking tray – don't overlap them too much – and bake for 5 minutes until golden brown, then leave them to cool. Break into wedges if you like, and serve the crispy tortillas with the guacamole.

1. Charlotte Sat 22 Nov 2008 @ 19:46 Im making them in school as a mexican recipe as we had to choose a country in groups and miss said that this would be a perfect recipe. I am making them on the thursday the 27th of november. From the comments below about the ripeness of the avacado do you buy the avacodo ripe or do you have to ripen them? Charlotte aged 13 x
2. Kat Fri 26 Sep 2008 @ 02:45 Avocados need to be ripe!!! Don't even bother with unripe. To ripen put them in a paper bag with bananas. The bananas produce a chemical called xylene which will ripen the avocado.

4. kim Sun 18 May 2008 @ 06:46 This has been a huge hit I've been using it for a long time now (since looking for a variation of the same old same old) People ask what the secret is...(home grown chillis hotter than the usual but they have a better taste than the shop bought ones.)
I have a hint for pesto whilst I'm here our local olive grower produces a magnificent lime agrumato olive oil (I would assume there would be plenty of people who make it) and if you substitute that it takes away some of the full on greasy feel of the pesto and gives it a nice fresh taste..use lime zest if you cant find a similar product or a tiny squeeze of lime.
