southern indian vegetable curry with curry leaves

method


Heat the oil in a pan and fry the mustard seeds for 2 to 3 minutes or until they start to pop.

Add the chillies, curry leaves, onions, coriander, cumin seeds, garam masala, turmeric, and chili powder. Stir and cook over a medium heat until the onion is soft. Stir in the chopped tomatoes.

Add your potatoes and aubergine to the sauce. Pour in the coconut milk and cook until the potato is soft and cooked through. Throw in the beans, peas and okra. Season and cook for a few more minutes until tender, then serve with some nice fluffy rice.

• 6 tomatoes, chopped
• 2 sweet potatoes, peeled and cubed
2 potatoes, peeled and cubed
• 1 aubergine, cubed
100ml coconut milk
a handful of French beans
• a handful of peas
• a handful of okra, sliced
• sea salt and freshly ground black pepper

I am desperately looking for Jamie's Chicken Curry Recipe that he did in around 2004'ish. It was similar to the above, however was for chicken! PLEASE can someone help.....<br /> Thanks

I made this and it was awesome. So flavoursome. However, did not add potatoes - just sweet potatoes and used a can of coconut milk. I also threw in some mushrooms and courgettes. It really was very good. utylutp<br />

i tried this added 400ml of c milk, but found it lacking in flavour. Used dried curry leaves rather than fresh don't know if that made a difference. <br /> <br /> being a jamie recipe plenty left over for tomorrow night might improve over night. <br /> <br /> do like jamies recipes apart from this one

Cooked this last night and was lucky enough to have read the comments before. I par boiled the cubed potatoes for 5 minutes and used a 400ml tin of coconut milk cooking with the lid off. The results were really good and I will give this another go some time.

Yep I reckon it's got to be a typo on the coconut milk. It's impossible to make like this. I made a vegetable madras last week (recipe here for anyone who wants it http://www.madrasrecipe.com/vegetable-madras-recipe/) worked really well! Hope they fix this recipe online, I'm seeing comments from 2010 and it's still wrong.

This recipe is great so long as you use 400ml of coconut milk and cook it with the lid on... We reckon it's a typo.

I completely agree with Gill; this recipe does not work. While I normally expect a recipe to require some tweaks and adaptations this was way off the mark. It simply isn't possible to cook 4 potatoes in some tomato juice and 100ml of coconut milk. Even after tripling the coconut milk and adding more tomato my cubed potatoes took over 1 1/5 hours to cook. I normally have great results with Jamie's recipes, however after a wasted evening trying to salvage a not so great curry my faith is waning.

I'd be amazed if this recipe has been tested by anyone. I made it and it was a disaster - how can you cook one and a half kilos of vegetables in 100ml of liquid - and with the pan uncovered?? I added more coconut milk, and even though the potatoes and sweet potatoes were cut into small dice, all the vegetables took so long to cook through it was a revolting mess by the end.
I cook curries 2 or 3 times a week so I'm not a novice!
