Good old mashed veg
This is a gutsy veg dish which just about everyone loves. My missus makes me fantastic mashed vegetables seasoned and drizzled with olive oil - the only thing is, they are meant to be separate servings of boiled carrots and new potatoes! So if you, too, are prone to overcooking your veg, just mash it all together.Feel free to use any single vegetable or a mixture of your favourites. Simply peel them, chop them up into golf-ball sized pieces, place in salted boiling water and cook until nice and tender. Drain in a colander before placing the veg back in the pan and mashing with a potato masher. Make it as smooth or as chunky as you like. Season carefully, then enrich the flavour with extra virgin oil or butter, or both, to taste. Once cooked, the mash can be kept warm in a bowl covered with kitchen foil over simmering water. This is handy when cooking for a dinner party, as you can get one lot of veg done and nicely out of the way.

Your mash seems delicious, and I love your idea to put some olive oil. In my case, I mix my vegetables with creme fraiche: That's all!!!

Another idea is to mash up the veg and with cream or creme fraiche and season with nutmeg. Yum! Lovely with sweet potatoes and carrots

Nice touch Laura, thats REALLY relevant.
I make this for my son the same way and he loves it! As much as I like it Ive never thought of eating it myself. Will have to try it.

yeh laura i agree with u totally i mde it 4 my dad 4 fathers day bt i undercooked sooo it was a complet disaster on a plate literally i we wer all nearly sick just lyk da mash lol oj jamie luv u reli

my youngest had allergies to dairy, soya and egg so this was perfect for her with olive oil. freezes great, tastes great what more can you need. my kids love it.

Great idea Jamie, someone suggested leeks, but I think better with root veggies. And yes, this mix would freeze in ice cream scoops.
Great for a quick answer to "but what veggies can I do that's quick". I would definitely add butter, but not olive oil, I think it is too strong.

We lived on that plus a similar thing, same bread base, but with cheese, onion and tomato, when we were moving from a mansion to a bungalow. We were all so knackered at the end of the day it was all we could manage. But tasty, and nutritious. (Erica, Thailand)

I was looking for something new to try this morning. I was trying to find a recipe you did with roasting carrots on your "Jamie at home" program and I came across this.
I made the mash with some new potatoes and baby carrots. I also grilled some small fresh carrots with olive oil and thyme, then and placed them on top of the mash.

I often mash root veggies together and they're really lovely. I don't usually add anything to them. My favourite is parsnip and carrot but swede and carrot is good too. We have no young children around now but it's great for us grown-ups!

That is great, you can also add some flaked tuna to the veg mash, and some chopped fresh mint and a touch of garlic. . . and that is really great.

made the mash with potatoes, carrots and swede, plenty of good butter and seasoning, it came out a treat, put a nice pile on a big white warmed plate and placed a fat and juicy pan fried pork chop on the top then poured your fantastic onion gravey with balsamic vinegar over the lot!!!! yam yam...

I don't want to really sound stupid but what is swede? Is it turnips? If it is I make something like this all the time and I put a little bit of sugar in it makes it taste great

I'm germinating a few sees at home (i know is the proper season to plant them) but... Im not really sure if this way will works..

Hi try adding a tablespoon of golden syrup to the mash.Really lifts the flavour of all the veg and highlights their natural sweetness

Hi Jamie, since being aware of you and your cooking and gardening I have been able to turn my life around. I now grow all my veggies and as I am a vegetarian this is wonderful but the most important thing is that I am fitter now than 10 years ago and guess what I AM 78, I never miss a programme and have two of your books and am looking forward to the next 20 years
