Quesadillas with guacamole
A quesadilla is basically a Mexican-style stuffed pancake, like a toasted sandwich, made with two tortillas sandwiched together with a cheese-based filling. They are warmed through and served with guacamole and sour cream. They are one of my favourite things to eat – Jools and I tend to have them every Saturday because we love them!To make the guacamole I use 2 or 3 ripe avocados, 2 or 3 ripe deseeded tomatoes and a couple of deseeded red chillies, and I throw all this into a food processor with a handful of peeled and chopped spring onions and a good handful of fresh coriander. Once this has been chopped up nice and fine, I add a couple more chopped tomatoes, a good pinch of salt and half of another avocado, chopped, to give it a nice chunky texture. Transfer everything into a bowl and season carefully with sea salt, freshly ground black pepper and a good squeeze of lemon or lime juice. If you decide to buy ready-made guacamole, which is a bit lazy but probably very realistic, you can put it into a bowl and chirp it up a bit with a squeeze of lemon juice, a little extra salt and a bit of chilli to give it a kick.
To fill the quesadillas you will need a couple of big handfuls of grated Cheddar and/or red Leicester cheese, some finely sliced spring onions, a couple of handfuls of chopped fresh coriander, and a red pepper and some red or green chillies all deseeded and finely chopped. Mix all this up in a bowl and then sprinkle half a handful between two layers of tortilla. You can make up 4, 10 or even 20 quesadillas and keep them in the fridge until you need them if you want.
Some people like to fry them in oil, but this makes them greasy and is not all that healthy. You can grill them, but I like to put them in a dry non-stick frying pan on a medium heat, so that after about a minute and a half on each side you are left with a really crispy outside and an oozy, stringy filling. Serve the quesadillas cut into quarters, with the guacamole, sour cream and a beer.
PS You can also posh them up a bit using grilled chicken or seafood, leftover pork, shellfish, or a selection of grilled vegetables.

Jamie,
Your an absoloute amazing chef. Im Italian and my father has owned restaurants all his life whilst being their very own chef! he is a true genius in the kitchen and i never thought id see someone who enjoys the taste of all things we have to offer like you do!!!!
your recipes are amazing my dad has even introduced your Quesadillas with guacamole as a starter in his restaurant in Italy!
He is also a pizaiolo (pizza maker) and so many clients have asked ofr this topping on pizza???!!!!!!! its amazing!!!!!!!!!!!!!!!!

Your guacamole is missing garlic! I know some people don't care for it, but it needn't be overpowering - just enough to nicely round out the other flavors. I live approximately 40 km north of the U.S./Mexico border and don't think I've ever had guacamole without garlic at any of the local restaurants on either side of the border.

You are my hero!!! Did your lamb curry tonite for supper and my 3 year old jamie (not named after you of course) who doesnt eat curry said I love this dinner... Amazing. Can anyone help me to find the tomato ketchup recipe that jamie has done in the past. I have been inspired to grow my own veg by jamie and am just about to harvest approx 200 tomatoes and cant find this in any books I got.. Please help. any ideas for what to do with many many cucumbers too?

WOW -- I lived on these while I was in Mexico and I have never been able to find them as nice as they were there. This is better then when I had them in Mecixo. I used fresh Prawns .... SO yummy!

Guacamale of my own... Put into a blender 3 or 4 green chillis (depends on you of course), stroke them with your hands (this gaves an extra hot), then a little of milk (depends on your favourite texture), one chopped onion, salt and one avocado... that's it... so delicious, so hot and so mexican... sorry Jamie but that's not a true Guacamole.

my boyfriends favourite is Gordon Ramsay but I like you better because you're not a cranky old dragon.
The other day I saw a show of yours (which might have been really old since I live in New Zealand) and you were cooking pineapple curry. It looked like the yummiest thing I've ever seen in my life. I've looked on the site and can't find it and I was wondering if it's in any of your books? I'd really love to try it.

Hi... I visited the restaurant fifteen in London on July 31, and what an experience. Everything I had was soooooo good! I had brought twelve others with me, and everyone enjoyed themselves. Where can I find the recipe for squash fritter? I live in Denmark, so I really can't come by the restaurant as often as I would like. Sending a chef to cook if for me would work for me too! Good recipe, but only a tip.. I am mexican, and the best guacamole is hand made, instead of using a processor mix everything with a fork, so it will mantain the little chunks of avocado.

Please disregard the foregoing recipe as it is Tex-Mex, Taco Bell material (not good). I am mexican and eat an average of 3 quesadillas a day. DO NOT USE CHEDDAR CHEESE. The ones in Mexico are made with Oaxaca or Chihuahua cheese, but the best substitute in Europe is Gouda. You don´t need two tortillas, just one folded tortilla with cheese (try adding ham!). Chuck the guacamole away and make Salsa Verde: 7 green tomatoes, 1/2 onion, handful of coriander and as many WHOLE green chillies as you want your salsa hot 3 or 4 should do it!

Jamie, You rock! I love the style with which you cook. I think your guacamole recipe sounds great! I think that sometimes people think everything has to be made the "traditional" way! I love the variations! If they don't, they don't, no biggie! Keep up the great work! Your personality will take you very far!

I love mine with diced chicken, cumin, oregano and cayenne, wilted spinach, garlic and some diced hot peppers and monterey jack cheese.
