Our apprentices recently visited private members' club Babington House, in Somerset, on Tuesday 18th September.  As part of the Soho House Group, Babington's kitchen focuses on field-to-fork food (the menu changes on a daily basis, according to the availability of the produce from their garden and from local suppliers).  The trip was therefore a perfect way of introducing our new apprentices to the subject of seasonality.  The education began with Head Chef Ronnie Bonetti demonstrating how to butcher a whole lamb.  The group were then taken on a tour of the beautiful grounds, and given the chance to see and taste some of the produce grown on-site.  22 year old apprentice Michaela Rouse said "the trip was pukka!  It was really interesting hearing about all the opportunities within the Soho House Group and being able to see the produce first-hand."
