The amazingly talented young chef Scott Fairweather came to Fifteen to lead a cooking workshop with the apprentices.  After introducing himself, Scott immediately won the group's respect by admitting that he's only 22 years old but already the Head Chef at The Punchbowl Inn and Restaurant in Crosthwaite.  Not only that, but he recently won the Cumbrian's Chef of the Year 2012 award!

Scott showed the group how to make: Confit pork belly, poached tenderloin, roast faggot, braised cheek, spinach, pumpkin, apple and prune.  Step by step, he went through the different stages of the dish, explaining where all the produce came from and spoke about how he gets to know his suppliers, talks through menu ideas with his staff and ensures that the Punchbowl's customers are always served the highest quality of food.

The apprentices got involved by chopping, tasting, and asked Scott a lot of questions about the food being prepared but also about his life and how he got to where he is now.  Programme Manager Tromie Dodd said: "Scott's knowledge and rapport with the group was brilliant.  They were engaged and keen to learn from someone that was clearly even more passionate about food than them.  I think he's going to have a few visitors over the next year wanting to work alongside him in his kitchen and get a taste of the beautiful Cumbrian countryside!"
