James Graham, born and bred as a countryman in Devon has a vivid first food memory, that of shooting and then cooking woodcock with his father. This love of the countryside has stayed with him throughout his career, with stints at The Horn of Plenty in Devon and Le Manoir aux Quat’Saisons in Oxfordshire to name but a few. James and his wife Erica owned and ran the much acclaimed Cotswold Country restaurant Allium in Fairford for 10 years, specialising in modern British food with impeccable provenance. After the end of the lease at Allium, James had the golden opportunity to take up the reins at the Grand Dame of Cotswold Country Houses, Bibury Court, which has been welcoming guests for over 20 years.
This much loved grade I listed Jacobean Mansion set down a quiet lane in Bibury behind impressive iron gates that open quietly to welcome you to a tranquil spot where the river can be heard rushing through the weir, swans glide silently downstream and James is at the helm of Bibury’s new restaurant Origin. Using his strong roots in the countryside along with many country friendships and passed on knowledge, James is cooking food centred around wild and foraged produce, mixing classic and modern techniques together to create food which is beautiful, thought provoking and above all, full of the flavour if its origin.
